I made today’s lunch while making a salad for dinner last night so it was pretty easy.
On Sunday I boiled a whole lot of chicken, portioned it up and put all but one piece in the freezer for future lunch dates. Since the chicken was already taken care of this took me about 10-15 minutes to make. It’s salad of chicken, artichoke heart (already in the fridge), cherry tomatoes and spring onion (from the garden), basil (from the window sill), red pepper, salt and pepper.
I’ve got a piece of pita bread with it and have packed some olives, and apple and a jelly too.

SUPER delicious! The oil from the artichokes made a great dressing and it was a 10/10 lunch.
Some nice things there…it’s a good time of year just now, lots of nice things around to throw together.
I feel a personal sense of achievement when I finish a jar of something in the fridge – like the artichokes. Our fridge seems to have so many jars!
